Chocolate & Almond Cake (sugar-free)

NEW A sugarfree, flour-free twist on my best-selling Reine de Saba chocolate & almond cake. Like the Reine de Saba, this is a rich, dark and moist cake, made with organic ground almonds. It's lightly sweetened with a Stevia-based sweetener, and I use no-added-sugar dark chocolate (72% cocoa solids, sweetened with xylitol) and Appleton Jamaica Rum, with a dash of almond extract. Topped with dark ganache.

Also available made with no-added-sugar hemp seed dark chocolate (left), and without the alcohol, if you prefer an even healthier option!

All ingredients gluten-free, sugar-free, flour-free and dairy-free. But if you'd prefer me to make your cake with butter, just let me know!

Perfect if you're avoiding sugar, this flour free cake is delicately sweetened with xylitol, and contains no sugar. Filled and frosted with mascarpone and covered with organic coconut chips, this is a gluten-free, sugar-free, flour-free cake

Trying to cut out sugar? Then this cake is just the ticket. It's a Coconut & Vanilla Cake, and it's flour-free, made with organic ground almonds and coconut. It's delicately sweetened with xylitol, so it's completely sugar-free.

Filled and frosted with a mascarpone, Greek yoghurt and coconut milk combo, and covered with organic coconut chips. All ingredients gluten-free, sugar-free and flour-free. Contains gelatine.

Honey & Orange Cake

If you're avoiding carbs in general, here's the ideal cake for you. This Honey & Orange Cake is flour-free, made with organic ground almonds and whole organic oranges. Using organic rapeseed oil, it's delicately sweetened with organic honey & agave syrup – a gorgeous, light cake.

The best time to eat cake is after a meal, so keep this in the fridge and enjoy a slice after supper. Serve at room temperature. All ingredients gluten-free and dairy-free.

Sugar-free, flour-free Chocolate and Prune Truffle Cake, made with organic, gluten-free and dairy-free ingredients, and Appleton rum. This version is made with agave syrup and honey instead of sugar

Sugar-light Chocolate & Prune Cake

I developed this recipe for a customer who fancied my Chocolate & Prune Truffle Cake, but without the sugar. It's flour-free, made with organic ingredients: extra-virgin olive oil, Fairtrade dark chocolate, free-range eggs, agave syrup, Madagascar vanilla extract and prunes simmered in Appleton Rum.

This is fabulous served with a jar of my Spiced Boozy Prunes and a dollop of creme fraiche.

All ingredients gluten- and dairy-free.

Raspberry & Almond Cake

This summer cake is made with organic ground almonds, rapeseed oil, and fresh raspberries, and lightly sweetened with honey and agave syrup. The almond sponge is moist and not-too-sweet, and with whole raspberries in the mix and on top, this is a real grown-up treat.

If you like, you can have this topped with glacé icing made with freshly pressed raspberry coulis and unrefined icing sugar. Or choose just fresh raspberries piled on top for a cake that's entirely free of refined sugar.

Serve at room temperature. All ingredients gluten-free and dairy-free.

A moist, dark, vegan fruitcake made with gluten free, dairy free organic ingredients: vine fruit & citrus zests, Bramley apples and ground almonds, as well as Appleton Jamaica Rum. Lightly sweetened with organic dates, no added sugar. Comes with organic icing sugar to sprinkle before serving. All ingredients gluten-free and dairy-free

Luxury Vegan Fruit Cake

This moist, dark fruitcake is made with the finest organic ingredients: raisins, sultanas & Bramley apples, orange & lemon zests and cold-pressed virgin coconut oil, all steamed in apple juice. Contains ground almonds, and Appleton Jamaica Rum. Lightly sweetened with organic dates, no added sugar. All ingredients gluten-free, dairy-free, egg-free, no animal ingredients.

Award-winning Luxury Jamaica Fruit Cake

The Great Taste Awards judges said: "This packs a punch. It has a good depth of molasses flavour which is powerful but does not overpower the fruit itself, which comes through well."

Dark, moist, silky-smooth and intensely alcoholic, this Jamaican celebration cake is made with organic vine and citrus fruit, finely chopped then steeped in Appleton Jamaica Rum and Amontillado sherry. Sweetened with organic blackstrap molasses, no added sugar. All ingredients gluten-free and dairy-free. No nuts used, but not guaranteed free from nut traces.
