Awarded a bronze medal at the FreeFrom Food Awards this sugarfree, flour-free cake is a new twist on my best-selling Reine de Saba chocolate & almond cake. Like the Reine de Saba, it's rich, dark and moist, made with organic ground almonds. It's lightly sweetened with a Stevia-based sweetener, and I use no-added-sugar dark chocolate (72% cocoa solids, sweetened with xylitol) and Appleton Kingston 62 Jamaica rum, with a dash of almond extract. Perfect for diabetics, or if you're trying to avoid sugar, this luscious cake is topped with dark ganache. All ingredients gluten-free, sugar-free, flour-free and dairy-free. But if you'd prefer me to make your cake with butter, just let me know! |

Sugar-light Chocolate & Prune CakeI developed this recipe for a customer who fancied my Chocolate & Prune Truffle Cake, but without the sugar. It's flour-free, made with organic ingredients: extra-virgin olive oil, dark chocolate, free-range eggs, maple syrup, Madagascar vanilla extract and prunes simmered in Appleton Kingston 62 Jamaica rum. This is fabulous served with a jar of my Spiced Boozy Prunes and a dollop of creme fraiche. All ingredients gluten- and dairy-free. My Chocolate & Prune Truffle Cake won a Great Taste Award. |
