My wedding service is 100% personal: you tell me what you want for your special day, and I'll do my very best to help you achieve it.
My gluten free wedding flavoursAll my wedding cakes are made with the finest gluten free ingredients, organic wherever possible. You'll get two layers of sponge in each cake – or three, if you want tall cakes – made with gluten-free, organic ingredients, with buttercream filling. Choose a flavour! Favourites include Madagascar Vanilla, Lemon Drizzle, Chocolate & Olive Oil, Orange & Almond, Coconut & Lime, Lemon & Vanilla, Chocolate & Orange, Raspberry & Vanilla, White chocolate & Raspberry, White Chocolate & Passionfruit, Red Velvet, and Carrot Cake.It really is up to you. So if you have a favourite flavour that you'd like to share with family and friends on your special day, I'll work with you to match that flavour in your wedding cake. If you love fruit cake, I have three fabulous rich fruit cake recipes I'd recommend for a wedding. They're all made with organic fruit soaked in Appleton Jamaica Rum, so you get a fabulously moist, rummy cake. And gluten-free ingredients; my Luxury Jamaica Fruit Cake, a Great Taste Award winner, is dairy-free too. And my Luxury Vegan Fruit Cake is gluten-free, dairy-free and egg-free.
Need a dairy free wedding cake?If you need a dairy-free cake, you could go for a luscious, dark Chocolate & Olive Oil Cake, which won a Great Taste award in 2018. My award-winning Orange & Almond Cake is moist and aromatic, and a popular choice for weddings. Lemon & Olive Oil is another favourite, or you could go for a sweet, dark Ginger Cake. All are made with gluten-free, dairy-free ingredients.And many of my other cakes can be adapted to make them dairy-free.
Fancy a gluten free chocolate wedding cake?If you love white chocolate, you could opt for a White Chocolate & Raspberry Cake – a Great Taste award winner: gorgeous, soft and sweet, with fresh berries and jam in the filling. At the opposite end of the spectrum is my Reine de Saba. This dark chocolate cake is made with ground almonds and a splash of Appleton Jamaica Rum (or coffee). It's lightly sweetened, deeply chocolatey, and covered with a luscious dark chocolate ganache. And it's a Great Taste award winner! For your wedding, I can make a layered Reine de Saba for you, filled with chocolate ganache – a popular choice with dark chocolate lovers! My award-winning Chocolate & Olive Oil Cake is a super-popular choice for weddings. It's really luscious, and the sponge is dairy-free. Layered with choc fudge buttercream, it's a fabulous cake.
And if you need a vegan wedding cake ...Vegan Carrot & Coconut Cake is a big fave with vegan brides. It's a FreeFrom Food award-winner, made with coconut and pineapple, with chopped walnuts, and filled with dairy-free Madagascar vanilla cream-cheese buttercream. Love chocolate? I recommend my sweetly soft and scrumptious vegan Mocha Chocolate Cake, made with gluten-free, organic ingredients, and filled with lush vegan mocha choc fudge buttercream. This gorgeous cake won Gold at the FreeFrom Food Awards. My vegan Orange & Almond Cake is another popular choice – moist and aromatic. Filled with dairy-free lemon or orange buttercream. If you love moist fruit cake, try my Luxury Vegan Fruit Cake. Made with ground almonds, it's gluten-free, dairy-free and egg-free. I can make this cake for you with or without Appleton Jamaica Rum.

How will your cake look?The simplest finish is a naked cake, with no frosting on the outside. But I prefer the semi-nude look. The skim coat of frosting will protect the cake while it sits out in the open all afternoon on your wedding day. But a full buttercream frosting will provide the best protection. American buttercream is the classic sweet frosting: made with icing sugar and butter and a little milk, plus your chosen flavouring. Or you can go for Swiss meringue buttercream made with whipped egg whites, so it doesn't need so much sugar. It's less sweet, and very buttery and silky. Only available for cakes made with butter. Need a smooth, sugarpaste finish? I use the best sugarpaste icing around: Massa Ticino. Lovely and smooth, and excellent taste too. To decorate your summer wedding cake, the safest and most beautiful option is to use organic edible flowers. Jan Billington started the whole edible flowers thing, at Maddocks Farm in Devon. Her flowers were not only beautiful, and good for you – they were delicious too! Sadly, Jan had to give up the farm in July 2022. But happily, she recommended Aweside Farm, who grow organically in Sussex, and I now get my organic edibles from them. Just click on the link to read more about what Sinead & Adam are doing at Aweside. Or if you want your cake to echo your floral arrangements, your florist can provide some blooms for the cake. However, florists' flowers are generally sprayed with chemicals to make them last longer, so they're not food safe, and need to be used with care. The range of fresh, organic flowers is more limited outside of the summer months. If you're getting married later in the year, meringue kisses are a great way to decorate your cake. Planning your budgetYour price will take into account the flavours you choose and how lavish you want your cake to look. Prices currently start at £8.00 per wedding portion for a Vanilla sponge with plain American buttercream filling and frosting. A wedding portion measures approx 5cm x 2.5cm (1-inch x 2-inch) x height of cake – the perfect size if you're serving your cake as dessert. An 8-inch round sponge cake will provide 24 wedding portions. Or 50 finger portions (measure approx 2.5cm x 2.5cm (1-inch x 1-inch) x height of cake – basically, a wedding portion cut in half. If you're paying more than £500.00 for your wedding cake, you'll benefit from my full wedding service. This includes a tasting session (3 flavours), design consultation and delivery and assembly at your London venue.
TastingYou can't possibly decide on your cake flavours until you've had a taste! You can either: Tasters are £25.00 per flavour for sponge cakes, plus p+p. We'll only eat a small slice of each cake. So after the tasting, you can take what's left home, so you can try your flavours again the next day, or share them with your family.
Cutting & serving your cakeThe best way to make sure your cake is eaten up on the day is to serve cake for dessert. A few berries or a roast peach on the side, and perhaps a dollop of cream, is a lovely accompaniment. If you're serving cake for dessert, it's simpler to serve just one flavour. But many couples like a couple of flavours, or even a different flavour in each tier: it's up to you what you choose. If you're doing a ceremonial cutting of the cake, think about when you'll do it. Remember: your caterers will need time to cut up the cake for serving. If you're serving cake for dessert, you could plan to do your first cut before the meal. That will give them enough time to take the cake to the kitchen and prepare the slices without having to rush. If you're dancing late into the evening, and serving cake with snacks and coffee, then timing is not a problem – you can cut the cake at the end of the meal. By the way, here's a tip about that first cut: First, grip the knife so your rings are on the outside – for the photos! Just make one cut, straight down. If the cake is on a high stand, cut the bottom tier. If it's low, or if you're using a sword, cut the top tier. It only needs to be a small cut (about 2.5cm/1-inch long) – your caterers will do the rest. Not serving the cake for dessert? You'll be busy – circulating, catching up and talking to your guests. So make sure to ask your caterers to save a slice of cake for you. Some couples choose to have their favourite flavour in the top tier, or even order a separate 4-inch cake. Just for the two of them, to take home and enjoy the next day.
